2 medium/large zuchinni 1 tsp. olive oil 1 pound ground chicken 1/4 tsp. salt 1/8 tsp. pepper 1/3 cup Romano cheese 1 cup of marinara sauce (I use Rao) 8 oz. shredded mozzarella cheese Directions:
Preheat oven to 375 degrees. Slice the zucchini in half lengthwise and scoop out the seeds with a spoon. Arrange the halves into an 8 X 12 pan lined with parchment or foil Rub the inside of each zucchini boat with olive oil. Bake for 25 minutes.
Add the ground chicken to a non-stick pot and saute' until fully cooked. Drain excess liquid. Stir in the salt, pepper, Romano cheese, and tomato sauce.
Spoon mixture into the zucchini boats. Top with shredded mozzarella cheese and bake at 375 degrees for 25 minutes.
Serves 3 - 4
Note: Ground Italian sausage, beef, or turkey also work well with this recipe.
