Chicken Paprika

​Chicken Paprika
 
Ingredients:
2 lbs. boneless skinless chicken thighs
1 tbsp. ghee
1 tsp. salt
½ tsp. pepper
½ cup sour cream
2 tsp. smoked paprika
1 teaspoon Better than Bouillon Chicken Base
 
Directions:
Melt ghee in large electric skillet.
Season chicken thighs with salt and pepper.
Saute chicken 5 minutes per side.
Cover for the last 4 minutes on the second side.
Stir in sour cream paprika and Chicken base.
 
Serves 4

Option:  When done, cut chicken into 1 inch by 1 inch pieces to serve over rice or veggies. Spoon a little of the sauce onto each serving.

Asiago Cheese Meatballs

Asiago Chicken Meatballs

Ingredients:
1 large beaten egg
1 clove of garlic or 1 tsp. Better than Bouillon Roasted Garlic Base
2/3 cup shredded asiago cheese
¼ cup grated parmesan cheese
3 tbsp. fresh Italian parsley chopped
1 tsp. salt
½ tsp. ground black pepper
1 lb. ground chicken          
 
Directions:
Preheat oven to 375 degrees.
In a medium bowl, beat the egg.
Mix in the garlic (or base), asiago cheese, parmesan cheese, parsley, salt, and pepper.
Add the ground chicken and mix well.
Using food gloves, form mixture into 16 meatballs.
Bake on parchment paper in a rectangular pan for 20 minutes.
 
Serves 4

Serve with tomato sauce or cut into smaller pieces and add to one of the cream based soups.

Billion Dollar Chicken

BILLION DOLLAR CHICKEN
 
Ingredients:

1 ½ pounds boneless, skinless chicken thighs (about 5)
6 oz. cream cheese
¼ cup Veganaise or mayonnaise
1 ¾ cups shredded mozzarella cheese (divided)
¼ cup California Sun-Dry sun-dried tomatoes (Julienne Cut with Herbs), chopped
¼ cup Mt. Olive Italian Seasoned Mild Banana Pepper Rings (chopped)
¼ cup grated Romano cheese
 
Directions:
 
Preheat oven to 400 degrees.
Line a baking sheet with foil or parchment paper.
Place chicken thighs flat on a baking sheet. Set aside.
In a medium bowl, microwave cream cheese.
Mix the Veganaise and 1 cup of the mozzarella cheese with the softened cream cheese. Set aside.
Mix the chopped sundried tomatoes and the chopped banana pepper rings. Set aside.
Spread the cream cheese mixture onto the chicken.
Sprinkle the remaining shredded mozzarella cheese.
Sprinkle the tomato pepper mixture onto each thigh.
Sprinkle the Romano cheese evenly on all thighs.
Bake for 30 minutes.

Serves 3 – 4

Note:  This recipe makes a significant amount of white sauce.  Having broccoli florets or zucchini noodles as a side dish is ideal, as the sauce, spooned onto the vegetable, is delicious!

White Pizza

WHITE PIZZA

Ingredients:

Low Carb Pizza Crust (See recipe on blog.)
4 chicken thighs (about 20 ounces)
4 tbsp. California Sun-Dry sun-dried tomatoes (Julienne Cut with Herbs)
15 rings Mt. Olive Italian Seasoned Mild Banana Pepper Rings
¼ cup Veganaise (or mayonnaise)
6 oz. cream cheese
1 1/3 cups shredded mozzarella cheese (divided)
3 tbsp. Romano cheese
 
Directions:

Place the chicken thighs in a pot. Cover with water. Add salt.
Cover and heat to boiling.
Once the water is boiling, set the timer for 20 minutes.
When time is up, remove the chicken from the pot.
Preheat the oven to 350 degrees.
Chop the chicken into small cubes.
Chop the sun-dried tomatoes and the banana peppers.
Mix the chicken with the sun-dried tomatoes and the chopped banana peppers.  Set aside.
In a bowl, microwave the cream cheese for 30 seconds.
Mix the cream cheese with Veganaise and 2/3 cup of shredded mozzarella cheese.
Spread the cream cheese mixture onto the cooled pizza crust.
Sprinkle 1/3 cup of shredded mozzarella on top.
Scatter the chicken mixture evenly over the top.
Sprinkle another 1/3 cup of shredded mozzarella on top.
Sprinkle 3 tbsp. of Romano cheese on top.
Bake for 10 minutes at 350 degrees.
Let the pizza rest for 5 minutes before slicing.
 
Serves 6 to 8

Cream of Broccoli Soup

​CREAM OF BROCCOLI SOUP
 
Ingredients:
 
3 tbsp. butter
1 small clove of garlic, minced
½ cup of chopped Vidalia onion
2 - 8 oz. bags of broccoli florets
1 - 14.5 oz. can of Swanson’s Chicken Broth
½ cup heavy cream
½ tsp. salt
1/8 tsp. pepper
¼ tsp. paprika
4 tbsp. shredded sharp cheddar (as garnish)
 
Directions:
 
Melt butter in a pot.
Add the onion and garlic.
Sauté till the onion is transparent and the garlic begins to turn golden.
Add the broccoli. Cover and continue cooking for 5 minutes.
Add the chicken broth. Cover and simmer for another 25 minutes until mushy.
Remove the pot from the stove and use an immersion blender to completely blend the mixture.
Add the cream salt, pepper, and paprika.
Return to the stove, stirring and heating until well blended.
Ladle soup into bowls and garnish each with 1 tbsp. of shredded cheddar cheese.

Cheese Wrap

CHEESE WRAP
 
Ingredients:
 
¼ cup packaged shredded cheddar cheese (Kraft)
 
Directions:
 
Line a small bowl with parchment (for easy clean-up).
Microwave the cheese in the bowl for 10 seconds.
Stir it with a spoon.
Microwave another 10 seconds.
Form the cheese into a ball (using food gloves).
Place on a sheet of parchment paper.
Place another sheet on top.
Allow the cheese to cool for about 20 seconds.
Use your finger to spread the cheese out in a circular motion, making it an even thickness to form a 5 inch circle.
Use a scissors to trim the parchment to fit in a zip-lock sandwich bag.
Refrigerate for at least 5 minutes.
Use as a roll for hot dogs or sausages.
 
Note: Let the meat rest for a while before wrapping it.  Otherwise, the cheese will start to melt.

Cream of Zucchini Soup

CREAM OF ZUCCHINI SOUP
​

Ingredients:

2 tbsp. butter
½ cup chopped sweet onion
1 clove minced garlic
6 cups of cubed zucchini (about 3 medium zucchini) with skin on
2 cups of chicken broth
½ tsp. salt
1/8th tsp. pepper
½ cup whipping cream
Fresh chopped cilantro for garnish
Cooked chicken chunks (optional)
Romano cheese (optional)
 
Directions:
 
Sauté onion and garlic in butter until onion is transparent.
Stir in zucchini cubes.
Cover and cook for 20 minutes, stirring often.
Add the chicken broth, salt, and pepper. 
Cook for an additional 10 minutes.
Remove from stove, and blend with an immersion blender.
Return to stove top.
Stir in whipping cream. 
Heat and serve with fresh cilantro

Serves 4
 
Option 1:  For a complete meal, ladle soup onto cubes of cooked chicken in individual bowls.
Option 2:  Add grated Romano cheese to individual servings, as desired.

Cream of Asparagus Soup

​CREAM OF ASPARAGUS SOUP

Ingredients:

2 tbsp. butter
1 clove garlic, minced
2 lbs. asparagus, washed, trimmed, tips removed, and spears cut into 1 inch pieces
½ tsp. salt
1/8 tsp. black pepper
2 cups chicken broth
½ cup heavy cream
Fresh chopped chives (optional)
​Fresh chopped dill (optional)
Cooked chicken chunks (optional)
 
Directions:

Melt butter  in the pot.
Add garlic and sauté for 1 minute.
Add asparagus spears, salt, and pepper.  Cook for 10 minutes.
Stir in broth, cover, and simmer for at least 15 minutes, until asparagus is very soft, but still green.
Remove from stove.
Puree soup with an immersion blender.
Return the pot to the stove on medium low heat.
Stir in whipping cream.
Add additional salt if needed.
Ladle soup into individual bowls.

Serves 4

Options:

To make a complete meal, ladle soup onto cubes of cooked chicken in individual bowls.

Garnish with fresh chopped chives or fresh dill.

For an elegant presentation:
Remove and set aside the asparagus tips before slicing the spears into pieces.
Boil the spears for 3 minutes, dip them in cold water, drain, and set them aside or refrigerate.
At serving time, heat the tips in the microwave if needed, and use as a garnish atop each bowl of soup.

ROAST CHICKEN SAUSAGE

Ingredients:

Detweiler’s Feta Chicken Sausage (5 links) (or other- approx. 1.35 lbs)
Cheddar Folio Cheese Wraps (optional)
 
Directions:

Preheat oven to 400 degrees.
Bake sausages in a parchment-lined square pan.
After 30 minutes, turn sausage, and bake an additional 20 to 25 minutes.
Remove from oven when golden brown.

Note: 

- I wrap my sausage in a cheese wrap.
​
- These are large sausages.  If using smaller sausages (e.g. 5 sausages per pound), reduce the cooking time to 20 minutes per side.

Roasted Chicken Thighs

Ingredients:

​
8 boneless skinless chicken thighs
Salt
Pepper
Paprika
Garlic powder
 
Directions:
 
Preheat oven to 425 degrees F.
Line a large sheet pan with parchment paper.
Pat chicken thighs dry with paper towels.
Lay thighs flat in the pan.
Sprinkle all 4 spices onto the chicken.
Using a food glove, pat the spices into the meat.
Flip the thighs, and repeat the seasonings on the top side.
Again, pat the spices into the meat.
Bake for 15 minutes.
Flip the chicken thighs, and bake another 10 minutes.
 
Serves 4 - 6
